Juicy Chicken

I am always looking for new recipes, especially easy ones that are fabulous! 

The other day I found this recipe and decided to try it...It was seriously wonderful!

Here's what you'll need.
3-4 chicken breasts
1 cup mayonnaise 
1/2 cup Parmesan cheese
2 teaspoons Seasoned salt
1 teaspoon garlic powder
black pepper


Put everything (except the chicken) in a bowl.  I like mayonnaise, but this part kinda grossed me out!  The thought of putting mayo on chicken like that does NOT seem appetizing, but TRUST ME!!!


Mix well. 


Smother mixture all over chicken.  This part was very messy.  I just dug my hands in there and started smothering!  Make sure you cover the whole chicken.  Do the bottom, then lay it in the dish and do the top.  Go ahead and put a good amount on there!  Again...TRUST ME!!!

I forgot to take a picture of the chicken after the smothering, so I had to sneak the oven door open!


Bake on 375 for 30 minutes or until chicken is cooked through.

 It almost looks like a breading on the chicken.  Be careful when you are serving the chicken, you don't want any of the topping to slide off.  (I recommend lifting from the bottom.)


 In this picture you can see how some of the topping slid off this piece.  No worries, I saved it!  :)


The mayonnaise makes the chicken very moist and the seasoned salt makes it taste fabulous!


I served this with mashed potatoes and creamy corn. (Recipe for that coming soon!)


My hubby absolutely loved this chicken!  When he gets excited about food, it gets me excited!  I will definitely make this again...and again! 


 We had one piece of chicken left over, so I warmed it up for lunch the next day.  It was not nearly as good.  It really was just like normal chicken.  It lost all its fantastic-ness in the fridge overnight.  I made three pieces of chicken because that's how many were frozen and I hate to leave just one chicken breast in the freezer.  You could cut this recipe down so you wouldn't have so much of the topping, but I think you could just put a little more of it on the chicken.  

If you do have leftovers, just don't expect them to be as good as they were the first time!  Maybe cut it up and put it in a salad or something like that.

  3. Both recipes were wonderful. Had a big family dinner last Sunday and everyone raved about the chicken. And then I brought out the cake. Wow!! Thank you so much for sharing.
